The Silver Cherub

1 1/2 oz Hangar One Straight
1 oz viognier wine
3/4 oz lime juice
1/2 oz cherimoya
3/4 oz orange blossom honey
1 egg white
splash soda water
2 dashes citrus bitters

Muddle fresh cherimoya w/ vodka, lime juice & viognier. Add honey & egg white. Dry shake for 5-10 seconds. Add ice and shake again for another 5-10 seconds. Strain into a collins glass filled with ice and bitters. Add a splash of soda water
