2 oz Hangar One Straight
3/4 oz lemon juice
1/2 oz grapefruit juice
1 oz thyme, fennel seed, lemon syrup
1 egg white
soda water

Dry shake egg white for about 30 seconds
Add other ingredients and shake with ice for another 30 seconds
Strain into a Collins glass rimmed with fennel pollen
Add soda, stir gently
Combine garnish with a lemon wheel

Thyme fennel seed lemon syrup: Toast a teaspoon of fennel until fragrant. Add two cups of sugar and two cups of water. Bring to a boil. Add a bundle of fresh thyme and the zest of 3 lemons. Let simmer for 2 minutes, cover and remove from heat. Allow to steep for a few hours, then strain and bottle
